ingredients
- 1 (18 1/4 ounce) box yellow cake mix
- 1 (3 1/2 ounce) package instant pistachio pudding mix
- 4 eggs
- 1⁄2 cup plain yogurt
- 1⁄2 cup vegetable oil
- 3⁄4 cup Midori melon liqueur
- 1⁄2 teaspoon coconut flavoring
- frosting
- 2 cups powdered sugar
- 1⁄4 cup Midori melon liqueur
- 1⁄4 cup cream cheese
- 2 tablespoons butter
- 1⁄2 teaspoon coconut flavoring
directions
- Preheat oven to 350 degrees F.
- In bowl, combine all ingredients except frosting; beat 4 minutes. Pour into well-greased Bundt pan. Bake 35 to 45 minutes. Remove from oven and cool in pan about 15 minutes. Remove from pan, prepare frosting and frost cake while still warm. Cool completely before serving.
- Frosting.
- In bowl, mix and beat all ingredients together at high speed until smooth and spreadable. Frost cake while still warm.

My mom had made something like this when I was younger, so now in the space of a few days, I've had to make two of these because the people my husband works with went absolutely bonkers over the taste and moistness. I added in a half-cup of chopped walnuts into the cake, but that was the only change.

Yummy cake- we can't get pistachio pudding mix in New Zealand, so I used strawberry and it was really good. Only thing that went wrong was that (I was making a birthday cake) the frosting is more of a glaze. I doubled the recipe and baked it in two round cake pans for a double level cake- which worked just fine, but if you're going for a birthday cake-type cake, go for a much thicker frosting- this one runs everywhere and is pretty much see-through. Definitely worth a go though- I got heaps of compliments!

this was a big hit at my church's coffee hour today! I used a different frosting (see my Recipe #195423 - easy frosting made with cream cheese & cool whip) with coconut sprinkled on top with no midori (it was for church after all) but I did follow the cake recipe to a T and it was great! I love these "doctored cake mix recipes"! Thanks for the post!
