This light fruit loaf cake is my Dutch grandmother's has been a staple in our family all my life. Even better the second day, sliced thinly, spread with butter.

  1. Sift dry ingredients together.
  2. Pour hot water on the dried fruit, then drain.
  3. Add the mixed peel. I also add glacé cherries, if available.
  4. Beat together eggs, melted butter and milk or water.
  5. Add the liquids with fruit to the dry ingredients.
  6. Bake at 170 º C for 1 hour, then in a cooler oven for ½ hour.
