  • Strain the yogurt in a yogurt cloth or in a sieve with kitchen towel for about an hour.
  • In the meantime, mix the egg with the vanilla.
  • Sieve in the sugar, baking powder and flour and mix.
  • Pour in the diet soda and lemon juice.
  • Grate in the lemon rind and mix all together.
  • Bake on 400°F for 20 minutes (this is an approximate) or in the microwave for 10 minutes.
  • When the cake is done, mix the coffee and sugar (or sweetener) and pour over cake. Let it soak up.
  • When the yogurt has become thickish (and cake has soaked up coffee), pour yogurt on the cake and spread an even layer.
  • Use a sieve to sprinkle cocoa powder on top of yogurt.

I love cooking! Like seriously it's become quite an obsession...:S Oh well, it's alot better than most things one could get hooked on. At least I'm keeping my friends and family happy :D I'm really concerned about health 'and stuff' so I will modify any recipe to make it low fat/low sugar/high fibre etc. Sometimes it works whilst keeping the taste, sometimes it doesn't. I guess I'm just gonna keep trying until I can make every recipe something you won't feel guilty about eating... Oh yea, I prefer using my microwave especially for baking, even though it's not even a microwave OVEN!
