My boys love this sandwich. Very nutritious.
- 1⁄4 cup peanut butter
- 1 tablespoon lemon juice
- 1 tablespoon dates, finely chopped
- 1⁄2 small apple, finely chopped
- 4 slices whole wheat bread
- Combine peanut butter and lemon juice. Stir in dates and chopped apple until well combined. Divide filling between 2 slices of bread. Cover with remaining 2 slices to make 2 sandwiches.
My new favorite peanut butter + fruit combination! A refreshing change from pb&banana (yes, even with the lemon juice!). The apples have to be very finely chopped indeed, but still a quick, healthy and very tasty sandwich. My mom and I both love it. It's a keeper - thanks!
I must have done something wrong...I couldn't get my peanut butter and apple mixture to "mix" let alone spread :(
Made this without the bread and loved my little breakfast salad. Terrific.
