Lovely chicken salad! I doubled this recipe and used cooked/cooled chicken breast. My DS and I stuffed our chicken salad in half of a whole wheat pita, I lined mine with spring greens. Like breezermom mentioned, combining the curry with the mayo first would have been a good thing. This is a great lunchtime recipe that I'll be using again.

I used braised chicken, as I don't use canned chicken. I also used pecans instead of walnuts. But other than that, I followed the recipe exactly. This is delicious! The only thing I would do differently is combine the mayonnaise and curry powder to make it easier to distribute the spice evenly. Delicious as is, but I can't wait to try it stuffed into a really fresh ripe tomato! Made this for Everyday is a Holiday Tag!

Delicious! I made this with some shredded roast chicken and, to meet personal taste preferences, I used only a tiny pinch of curry powder and substituted sultanas for the raisins. Loved the range of flavours and textures and I'll certainly make this again for take-to-work lunches. Made this for Everyday is a Holiday Tag!

I was surprised by this--I thought I'd like it, but I didn't expect to love it! I made this for DH's lunch, and I wish I'd kept back more than just a taste of it for me! I used chicken breast leftover from making Mama's Chicken Soup, golden raisins, and a great big Fuji apple. I had to add extra mayo, probably due to the large amount of apple and celery that I put in. I mixed the curry spice (Green Ship label Madras Curry Powder) into the mayo before tossing it with the salad. I let it sit overnight in the fridge before I tasted my all-too-tiny portion, and the flavors had combined to make a really delicious salad! DH described it as a curried chicken Waldorf salad, which seems to fit pretty well. Thank you so much, MsSally!

I doubled this for lunch for the DM and myself and there was even a little left over. As we don't get canned chicken I used have a small deli roasted chicken (about 7 oz of meat) and also added some grated carrot. I served on a bed of lettuce but really think this mix would be great stuffed in lettuce leaves and eaten as a "sandwich", great for a school lunch in a lunch box. Thanks MsSally for getting some fruit and more vegetables into my diet, made for Every Day is a Holiday Tag game.
