Special K Treats

Recipe by Pam-I-Am

A retro-recipe from the 60's. Who knew Special K could be so yummy? My girlfriend Debbie brought these to my 2004 christmas cookie exchange. Her mom made these when she was little. The recipe used to be on the back of Special K boxes. She called her mom for the recipe and luckily, after all these years, she still had it! Thanks Sue!!

I've made something similar to this using chow mein noodles. But didn't have the noodles on hand, so I decided to try using special k. The treats are good but fell apart. I would recommend using less of the cereal so you'll have enough of the butterscotch/peanut butter to bind it together.

Ingredients Nutrition

  • 1 (11 ounce) package butterscotch chips
  • 1 cup peanut butter
  • 10 cups Special K cereal

Directions

  1. In a stovetop pan on low heat, melt butterscotch chips. Once the chips begin to melt, add the peanut butter. Stir often.
  2. Once these ingredients are melted, add the cereal, mix/stir thoroughly. Drop by tablespoon full onto wax paper covered cookie sheets. Refrigerate. Makes 6 dozen.
