- 1 (30 ounce) bag frozen hash browns, thawed
- 3 cups shredded sharp cheddar cheese
- 3 tablespoons butter
- 12 ounces Canadian bacon, thinly sliced
- 1 1⁄2 cups onions, finely diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 8 ounces button mushrooms, sliced
- 2 roma tomatoes, sliced
- 12 large eggs
- 2 1⁄2 cups milk
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
