Absolutely wonderful chicken. Made as posted assuring I had the fresh herbs on hand before making. I think the neighbours must have known just how good our supper was - the aroma had us anticipating. Made as posted and wouldn't change a thing. I am coming up with a great collect of recipes for those summer guests!

Words cannot describe what a taste of heaven this recipe is. We used cornish game hens because I didn't think we'd be able to find baby chickens, but the size was about right. The hens were moist and delicious and the thyme was a wonderful addition. I also put a few slices of onion into each of the cavities. I didn't have red onion, but used a sweet onion instead and went with a splash of heavy cream instead of the 1/3 cup cream. We loved this and I've had a request for this again.
