Spareribs in Black Bean Sauce

"Had this recipe about 30 years, still one of my favorite and a hit at family get togethers. Found it in an Hawaiian-Chinese cookbook. Ribs are the sweet and sour kind. Black beans are the ones in plastic bags in the Asian section. Bottled black beans don't work as well."

  • Parboil spareribs. Rinse and drain well.
  • Dredge in flour lightly.
  • Heat oil in heavy pan.
  • Stir fry black bean mixture. Add spareribs and brown.
  • Add seasoning while browning spareribs.
  • Add broth. Bring to boil. Cover and simmer for 45 minutes.
  • Thicken with cornstarch mixture.
  • Garnish.
