    Had this recipe about 30 years, still one of my favorite and a hit at family get togethers. Found it in an Hawaiian-Chinese cookbook. Ribs are the sweet and sour kind. Black beans are the ones in plastic bags in the Asian section. Bottled black beans don't work as well.

    Ingredients:

    • 3 lbs spareribs (cut up)
    • 1/2 cup flour
    • 3 tablespoons oil

    BLACK BEAN MIXTURE

    SEASONING

    BROTH

    CORNSTARCH MIXTURE

    GARNISH

    Directions:

      Parboil spareribs. Rinse and drain well.
    2. 2
      Dredge in flour lightly.
    3. 3
      Heat oil in heavy pan.
    4. 4
      Stir fry black bean mixture. Add spareribs and brown.
    5. 5
      Add seasoning while browning spareribs.

      Add broth. Bring to boil. Cover and simmer for 45 minutes.

      Thicken with cornstarch mixture.
    8. 8
      Garnish.
