A simple Spanish rice recipe that can be thrown together with ingredients that are probably already in your kitchen.

  1. Saute chopped onion and garlic in vegetable oil in a skillet. I like to saute them on low for about 10-15 minutes to really flavor the oil and to keep the garlic from burning but this is not necessary. If you prefer you can saute the onions until soft and then throw the garlic in for about 1 minute.
  2. Add rice and saute for about 5 minutes over medium heat.
  3. Add the chicken stock, tomato sauce, cumin, smoked paprika, cayenne, and tabasco sauce and stir to combine. Bring to a boil, cover, and reduce heat to low. Cook for 20 minutes.
