In a large saucepan, fry bacon until crispy. Add onion, rice and spices. Fry until rice is lightly browned and onions are nearly clear. Add diced tomatoes and 1/2 to 3/4 cup of water. Bring to a boil.

Reduce heat and simmer for 20 minutes or until rice is tender.
This was so good! Slightly spicy, full of flavor. Would have never thought of putting bacon and rice together, but it was a fabulous side dish for dinner.

I liked the addition of bacon. For me it was more like a Mexican rice, rather than Spanish.It must have been the cumin and chili. Tasty dish and no leftovers for us!
