- 2 chicken breasts
- 3 cups rice
- 15 1⁄2 ounces black beans
- 7 -8 ounces tomato sauce
- 14 ounces beef broth
- 15 ounces Sazon Goya seasoning
- 2 teaspoons of minced garlic
- 3 1⁄2 tablespoons olive oil
directions
- Boil water in a small pot, cut chicken into large chuncks and when water begins to boil, add chicken. Cook chicken.
- In a large saucepan add olive oil and garlic. Sautee.
- Add Sazon and let simmer. Add tomato sauce and let simmer.
- Add broth and beans. Stir. Then add rice, stir and bring to boil. Add cooked chicken to rice.
- Turn heat to medium-low and simmer until liquid had mostly absorbed. About 20 minutes. Do not stir during this time.
- After 20 minutes stir, cover and reduce heat to low.
- Leave it there for 15 minutes. Check to see if rice is tender. If not add half a cup of water, cover and continue to simmer until water is gone and rice is cooked.
