I orginally found this in a very old Better Homes and Garden cookbook. It's been my family's favorite for years . . . try it and you'll see why! Use hotter chilis to achieve more spice. The brown sugar can be deleted for less sweetness. The Chili Sauce I use in the US, is a slightly sweet (not hot) sauce, believe it's made by Heinz (small fat jar). I have substituted pureed tomatos here in Mexico and it works great!

  1. Fry the bacon until crisp.
  2. Remove bacon and crumble.
  3. Save 1/2 of bacon fat.
  4. Saute onion and pepper (in 1/2 of the fat from the bacon) until tender. Add rest of ingredients.
  5. Stir, cover and simmer for 45 minutes.
  6. Add crumbled bacon before serving.

GREAT, GREAT TASTING RICE! I did use but half of the bacon indicated, & included 1/8 cup of diced green bell pepper & the same amount of poblano pepper, & this side dish was wonderful as well as being sooo easy to prepare! This was delicious - I made it with your Beef Carnitas - and what a treat! My family devoured this meal!! I used some Hatch chilis along with the green pepper and a little jalepeno I had in both dishes. YUM! **Went to market 2007**

ok, I am bummed. I went to buy chili sauce and stupidly bought sriracha sauce and added only 1/8 of a cup. But, it is inedible... I think it would have helped to specify what type of chili sauce, b/c the only other chili sauce I saw in the supermarket was sweet chili sauce?? Anyway, it looks beautiful, but it was ruined.
