I was given this recipe from a coworker. The V-8 juice is what makes this so good.
- 1 lb ground beef
- diced onion
- diced bell pepper
- 1 (16 ounce) can diced tomatoes
- 1 (46 ounce) can V8 vegetable juice
- 1 -2 cup rice
- Brown ground beef with onions and peppers.
- add tomatoes and V-8.
- let it simmer for 10 minutes then add rice.
