Spanish make bocadillos or sandwiches by placing a piece between two pieces of a baguette. Or serve it as a tapa or appetizer. I likes his with sour cream and salsa. So easy to do! I will definitely make this again. Thank You!! Grpa

I rarely have something this substantial for breakfast but overhead the geese are flying south in their chevrons, there is a thick frost on everything outside and all the ponds are frozen. This was warm, comforting and very enjoyable just like Pammy. This recipe was made in her memory. I'll miss her fun and happiness as well as all of her baked wonders that she used to throw to me from about a thousand miles away. What an arm that girl had, lol. RIP Pammy

I love me a good Spanish omelet, and this one did not let me down. I usually use cubes of ham, but now I know I prefer the flavor of the bacon. This was a quick and easy weeknight dinner after we all had busy days. The only thing I changed was to cut the raw bacon into small pieces, and then fry it. I just find it a lot less messy when I do it that way. Plus, I can discard any fat I don't want before it goes in the pan. I served it with spicy salsa and some sour cream. Made and enjoyed in Pammy's honor. We'll miss you!

Very nice recipe. I did add 2 extra potatoes, but kept the rest as is. Made for pammyowl's Cook a Thon.

I made this with turkey bacon. I think it would have been better with regular bacon, but was still amazing. DH said - this is good and believe me, that is huge praise. I made this for Pammyowl's Cookathon. Pam I wish you were here to read your reviews. You will be so missed.

Yummy! We really enjoyed this quick and easy omelet. I only had 3 pieces of bacon, so I diced up a couple of pieces of leftover ham and added that to the pan. Also, I added 3 TBSP. of milk to the eggs when I whisked them together before adding them to the pan. I cooked this in a 10" cast iron skillet, so after adding the eggs to the pan I put the pan in the oven at 350 degrees for about 10 minutes or until the eggs were set. I served this with sour cream and salsa for a delicious, filling breakfast. Thank you for sharing!

Wonderful simple morning tortilla!!!! I made this as written but scaled the recipe down to 1/3 of the recipe. I cooked it differently due to not having a lid for my small fry pan, so I cooked it the same until I poured in the eggs, then I put it into a 350 degree oven for 10 minutes and it turned out great. Thanks for sharing the recipe. Made for Newest Tag Game.
