  • Mix first 8 ingredients together in an electric mixer; mix well.
  • Add next 3 ingredients.
  • Raisins should be added last.
  • Bake at 350°F in 9x13 inch pan for 30-35 minutes; tube pan 40-45 minutes.
  • Cool thoroughly and frost if desired.
  • For Frosting:Combine frosting ingredients in bowl.
  • Beat well, adding more milk or confectioners' sugar to make it smooth and easy to spread.

  2. Delicious! Perfect. The cake is quite enough on its own and can easily do without the icing, it's that rich and moist. I'll be making this Spanish Bar often just to have it available for unexpected guests. On special occasions I'll make the icing which is just too delicious.
     
  3. I'm looking forward to making this recipe. Didn't remember this cake being offered by A & P but one just like this being available in vending machines. It was the best, moist cake I ever had. I remember when buying in the summer time I had to let it cool down from the warm vending machine so as not to pull off the yummy frosting. Years later the vending machine stopped making this cake available and instead substituted a carrot cake. NOT THE SAME....
     
  4. This is a delicious and moist cake, great for baking in advance as it won't dry out. I like to soak the raisins in rum for a few days in advance.
     
  5. Well I must be a dummy. I'm certainly no baker but there's no directions AFTER u add the raisins??? Just add the raisins n bake,.. Don't u have to stir or beat it again? N for how long? I used my own judgement and beat it about 1-1/2 mins. It's in the oven n I'm praying! Will report back. puzzler

Tweaks

  1. Soaking the raisins in rum is excellent. A mix of golden and black raisins is very nice. Substituting craisins is also excellent (I soaked them in triple sec). The frosting is not really necessary and if you prefer a less sweet dessert you can omit it. It also works nicely with a simple lemon glaze (lemon juice + confectioners sugar) if you want a little sweet but not a lot. It works very nicely in a 9x13 pan, or an 8x8 if you halve the recipe. It also makes great cupcakes. Baking time for cupcakes was more like 25m.
