- Chop spinach roughly.
- Heat oil and saute onion for 10 minutes Add rice and spinach and tomato paste. Saute 5 minutes.
- Add water and stock cube and seasoning, mix well.
- Bring to boil and turn down heat and cook for 20mins or until rice is soft.
- Serve.

Easy and delightful, beats the tar out of that San Francisco treat stuff. I used a bag of prepared fresh spinach and seasoned it with Cavender's instead of salt and pepper. Wholesome and very Mediterranean, a great side for almost any meat. Made for Zaar World Tour 6 on behalf of the Voracious Vagabonds.

This was super easy and super tasty! I had some lovely spinach fresh from the garden, which was really lovely in this recipe.
