  • Chop spinach roughly.
  • Heat oil and saute onion for 10 minutes Add rice and spinach and tomato paste. Saute 5 minutes.
  • Add water and stock cube and seasoning, mix well.
  • Bring to boil and turn down heat and cook for 20mins or until rice is soft.
  • Serve.

  1. Very tasty spanakorizo and different to the way I make it. My kids did miss the lemony flavour of mine but this was easily solved by squeezing a bit of fresh lemon over top and mixing it in. Thanks.
     
  2. Easy and delightful, beats the tar out of that San Francisco treat stuff. I used a bag of prepared fresh spinach and seasoned it with Cavender's instead of salt and pepper. Wholesome and very Mediterranean, a great side for almost any meat. Made for Zaar World Tour 6 on behalf of the Voracious Vagabonds.
