Directions

  1. Add the oil to a large skillet.
  2. Set burner to medium and allow the oil to heat preparing the other ingredients.
  3. Chop potatoes in small cubes and add to skillet, cover skillet.
  4. Cut Spam into small cubes, add to skillet.
  5. Chop up onion and mince garlic, add to skillet once Spam begins looking crispy.
  6. Stir the mixture periodically until the onion is translucent.
  7. While waiting for onions to become translucent, whisk eggs.
  8. Add eggs once onions are translucent, stir constantly until eggs are cooked through.
  9. Remove from heat, serve and enjoy.
