Spaghetti With Tomatoes, Basil, Olives, and Fresh Mozzarella

- 907.18 g vine-ripened tomatoes, chopped (about 6)
- 340.19 g salted fresh mozzarella cheese, cut into 1/4-inch cubes, at room temperature
- 295.73 ml chopped fresh basil
- 118.29 ml halved and pitted black olives
- 19.71 ml balsamic vinegar
- 6.16 ml salt
- 2.46 ml fresh ground black pepper
- 453.59 g spaghetti
- 118.29 ml olive oil
- 3 garlic cloves, minced
directions
- In a large glass or stainless-steel bowl, combine the chopped tomatoes with the mozzarella, basil, olives, balsamic vinegar, salt, and pepper.
- In a large pot of boiling, salted water, cook the spaghetti until just done, about 12 minutes. Drain, add to the tomato mixture, and toss.
- Heat the oil in a small frying pan over moderately low heat. Add the garlic and cook, stirring, for 1 minute.
- Pour the oil over the pasta and toss again.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
