Spaghetti With Bacon and Eggs

This was easy to make tonight and it made my family wonder if we were having breakfast or supper! Ha ha! I really liked the simplicity of this. It did however need more flavour - maybe some garlic or onion sauteed with the bacon? It would be good to toss with a little olive oil as well. Thanks mary for something different and tasty! Made for Newest Tag. :)

  1. Cook pasta according to the package directions. Reserve 1/2 cup of the cooking water. Drain the pasta and return to pot.
  2. Meanwhile, cook the bacon in skillet over medium high heat until crisp, 6 to 8 minutes. Let cool and break into pieces.
  3. Wipe out skillet and return it to medium heat. Crack the eggs into the skillet; cook until the whites are set but the yolks are still runny, 3 to 4 minutes.
  4. Toss the pasta with the bacon, 1/2 cup of the Parmesan cheese, salt and pepper and reserved pasta water.
  5. Divide pasta among bowls and top with the eggs. Sprinkle with remaining Parmesan.
