  1. Place the squash in a very large pot. Add water to cover. Bring to a boil.
  2. Cook, uncovered for 30-60 minutes or until easily pierced with a fork.
  3. Drain, halve and set aside until cool enough to handle.
  4. Coat a 2 quart saucepan with cooking spray. Add the onions and garlic and cook over medium heat until translucent, about 5 minutes.
  5. Add the garlic and sauté 1 minute.
  6. Add the tomatoes, tomato puree, oregano and pepper. Simmer for 20 minutes.
  7. Discard the seeds from the squash. Using a fork, separate the flesh into spaghetti like strands.
  8. Reheat briefly in large frying pan. Serve topped with sauce and cheese.
