  1. In partially covered microwave safe dish, place squash cut side down and cook 8 minute in microwave.
  2. Cool slightly.
  3. Using fork, remove strands.
  4. In skillet coated with olive oil-flavored cooking spray, cook fennel and leek for 3 minutes, stirring occasionally.
  5. Add chopped tomato and seasoning; cook 1 minute more.
  6. Remove from heat; add feta cheese.
  7. Spoon over squash.
