I love this recipe but found it impossible to cut the squash in half, so I microwaved it for 5 minutes.
This is a nice, unique side dish. It's very creamy and cheesy. I made this as written, just adding a little garlic ans some salt. I loved the kick of heat from the crushed red pepper. Thanx for a new to prepare spaghetti squash!
This is really a different way to serve squash and we quite enjoyed it. It is great for South Beach Dieters as it's almost like potatoes au gratin only it is "legal"! Once I got the dang squash cut in half it was smooth sailing. I used low fat sour cream and low fat cheese blend with cheddar, gouda, mozzarella and provolone. Yum! I really enjoyed having a new recipe to try using spaghetti squash.To lighten up the original recipe: I deleted the butter and cooked the onions with a teaspoon of EVOO. I used ?Light? sour cream and low fat mozzarella cheese. I also found it was important to use a large enough mixing bowl to evenly coat the spaghetti squash with the sour cream mixture. <br/>Thanks for sharing!
I really enjoyed this dish! I used pepper jack cheese, more crushed red pepper and added about a half t, of poultry seasoning and salt. I'm looking forward to making this again.Thanks for sharing the recipe!

Spaghetti Squash Au Gratin Substitute: Crockpot Onions Bulgarian Yogurt (White Mountain) Pecorino Romano Microwaves make rubber and cancer! ? Instead: Place halves cut side down on lightly oiled parchment covered cookie sheet, bake for 40 minutes at 400° It's worth it, both for health and taste! Instead of throwing out the shells, flip them on the parchment then lift them with the parchment into a 9x12 casserole dish and load each one with the filling. Follow original recipe to complete. After baking, without moving the pan, broil for 5 minutes. Yum! New fav, this modified version is going in my rotation. Filling, satisfying, yet clean and light. I think it's a great dish whether you're eating alone or throwing a dinner party.
My whole family lived this!! I added some Italian sausage on top, I will definitely be making this again.
i added hamburger to this and substituted plain greek yogurt for the sour cream.....so perfect.
