  1. Make a light roux over a medium fire with olive oil and butter.
  2. Add flour and cook flour out of raw state; add garlic.
  3. Pour milk and half-and-half in the roux with pepper and parsley.
  4. At the last moment add the cheese.
  5. Place over hot pasta.
