ingredients
- 3⁄4 cup onion, chopped
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 2 (1 lb) cans tomatoes
- 2 (6 ounce) cans tomato paste
- 1 cup water
- 1 tablespoon sugar
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon pepper
- 1 1⁄2 teaspoons dried oregano
- 1 bay leaf
- 4 dry bread, sliced
- 1 lb lean ground beef
- 2 eggs
- 1⁄2 cup romano cheese, grated
- 2 tablespoons parsley, chopped
- 1 garlic clove, minced
- 1 teaspoon oregano, crushed
- 1 teaspoon salt
directions
- 1. Cook onion and garlic in hot oil till tender but not brown. Stir in the next 8 ingredients. Simmer uncovered 30 minutes; remove bay leaf. Add Italian Meat Balls (see below) and continue cooking about 30 minutes longer.
- 2. Soak bread in water for 2-3 minutes, then squeeze out moisture. Combine soaked bread with remaining ingredients, mixing well. Form in small balls (about 20). Brown slowly in 2 T hot olive oil. Add to sauce, cook 30 minutes as directed above.
