- Heat oil in a wok. Add scallions and ginger, and stir-fry over high heat 30 seconds until aromatic. Add chicken wings, dry sherry, mushroom soy, sugar, and 1 cup of water. Bring to a simmer, cover, and reduce heat to medium. Cook until chicken is tender but not falling apart, about 20 minutes. Serve at room temperature.
