  • In slow cooker, place all ingredients except cheese. Stir to combine.
  • Cover and cook on low heat for 7 - 8 hours or on high heat for 3 1/2 - 4 hours.
  • Stir in cheese until melted.

  1. I found this recipe from Better Homes New Cookbook, and it's phenomenal. I substituted black beans because I didn't have white beans (I'd prefer this with white beans, but it's still terrific with black beans). I even ate some of this before I put the chicken in, and you could make this with just the beans and love it. Terrific flavors and texture. The recipe I had didn't put the cheese in until you ladled it into original bowls, and if desired add sour cream and additional chilies. Very satisfying. Thanks for posting!
     
  2. This was fabulous. I love the warmth and flavors. Only changes I made were to use dried beans which I soaked overnight the night before, and I added a sweet yellow pepper and hominy because I had them on hand. I left off the chili peppers. Served this with green salsa for garnish. Loved it.
