I found this recipe from Better Homes New Cookbook, and it's phenomenal. I substituted black beans because I didn't have white beans (I'd prefer this with white beans, but it's still terrific with black beans). I even ate some of this before I put the chicken in, and you could make this with just the beans and love it. Terrific flavors and texture. The recipe I had didn't put the cheese in until you ladled it into original bowls, and if desired add sour cream and additional chilies. Very satisfying. Thanks for posting!

This was fabulous. I love the warmth and flavors.
Only changes I made were to use dried beans which I soaked overnight the night before, and I added a sweet yellow pepper and hominy because I had them on hand. I left off the chili peppers.
Served this with green salsa for garnish. Loved it.
