  • 8 slice bacon
  • 4 (453.59 g) turkey cutlets
  • 1 avocado, ripe, pitted and peeled
  • 29.58 ml lime juice
  • 14.79-29.58 ml pickled jalapeno pepper, chopped
  • 12 slice whole wheat bread, lightly toasted
  • 1 tomatoes, thinly sliced
  • coarse salt
  • pepper

  • Cook bacon in large skillet over medium heat til brown and crispy. Transfer to paper towel lined plate. Pour off all but 2 T fat from skillet.
  • Season turkey with salt and pepper. Add to skillet and cook over med til done, 2 to 3 minutes per side. Transfer to plate.
  • In small bowl, mash avocado, lime juice and jalapenos with a fork, then season with salt and pepper.
  • Spread avocado on one side of each slice of toast. Layer turkey, bacon, tomato and toast to form 4 triple layer sandwiches. To serve, skewer with toothpicks; slice in half with a serrated knife.

I am a former retail management slave who is now a stay at home mom who absolutely loves her job. I have an eight year old, a two year old and a nine month old who all bring their own kind of joy to my life. My favorite thing in the world is to cook. We have a real, from scratch family dinner almost every night. Please don't be offended if I somewhat change a recipe in my review. I look at recipes sort of as guidelines, and alter them according to inspiration. I've received alot of helpful advice from reviews, that's why I share what I've done differently. With my little ones I'm pretty busy, but I LOVE this site and plan on being even more active as they get older.
