This is what Bobby uses to season his french fries at Mesa Grill. This calls for fresh cilantro but I used Knorr cilantro cubes.
- 22.18 ml dried ancho chile powder
- 4.92 ml ground cumin
- 9.85 ml kosher salt
- 29.58 ml cilantro, freshly chopped leaves
- Whisk together all ingredients until combined.
Ah, Mr. Flay does like it spicy! I tried the fresh cilantro, and didn't think it blended well with the dry spices. Dried would probably work better, though I would add more as the flavor is not as strong. It's an interesting blend. I tried it on green beans and on popcorn. A versatile seasoning. This worked great on sweet potato fries! I did use fresh cilantro. A little bite to it, which was a good thing! Thanks! Made for the Food Network challenge in the photo forum. :)
