    psych751's Note:

My friends beg for these everytime I give a party! They are so delicious and satisfying, I just never seem to fix enough no matter how many I make. I wonderful change from white oven fried potatoes which are so high in carbs. THESE ARE VERY LOW CARB. And I dare you to stop at just one serving...I found this recipe in Healthy Cooking but have modified it to my own taste.

I loved everything about this recipe: easy, fast, cheap and delicious! I was grilling one of those pre-marinated pork tenderloins (mesquite) so I was looking for some healthy, satisfying veggie to go with it. Found it! It really impressed our last-minute dinner guest. This is a keeper. Thanks so much for sharing it!

These were very tasty!! Usually, recipes containing sweet potatoes are made with sweet ingredients and I wasn't sure what to expect with the spicy ingredients. The combination of sweet from the potatoes and spicy from the remaining ingredients was surprisingly very good. They were also very addicting. It seems I couldn't stop eating them. I will definitely be making these again. Thank you for sharing this recipe.
