Southwestern Corn Salad

Spicy and sweet, delicious, and easy! You probably have the ingredients in your pantry already. Best if let sit overnight, plastic-wrapped, to get rid of that sharp onion flavor. If your onion is ultra-sweet, you can skip this step.

Ingredients:

Servings: 4

SALAD

• 1 (8 ¾ ounce) can corn niblets
• ½ cup red onion , finely chopped
• ½ cup bell pepper , chopped

DRESSING

• ¼ cup honey
• 1 teaspoon hot sauce , less if you like
• ¼ cup reserved juices , from corn
• 3 tablespoons fresh-squeezed lime juice

Directions:

1. Mix together the corn, onion, and bell pepper.
2. Whisk together the honey, hot sauce, reserved juices, and lime juice. Be sure to break up all the honey.
3. Toss all ingredients together and refridgeirate overnight (see headnote.).
