Found this tasty rendition on Ingle's Markets webpage. It really adds a lot of zip to ordinary corn off the cob. Can be increased to suit your needs.
- 5 ears corn, cleaned and kernels removed
- 1 bell pepper, chopped
- 1⁄4 cup onion, chopped
- 2 tablespoons margarine
- 1⁄4 teaspoon black pepper
- Saute onions and bell pepper in margarine until soft.
- Add corn and black pepper.
- Cook over low heat for 10 minutes or until corn is tender, stirring ocassionally.
