Southwest Stroganoff

"Got this from my Canadian parenting board. How much bite it has depends on the heat of the salsa used."

• Ingredients: 5
• Serves: 6

ingredients

• 1 lb lean hamburger
• 2 cups water
• 2 cups salsa
• 2 cups uncooked pasta
• 1⁄2 cup fat free sour cream

directions

1. Brown hamburger.
2. Stir water, salsa and pasta into meat.
3. Heat to boiling, reduce heat.
4. Cover and simmer for 15 minutes.
5. Peek after 10 mins to make sure you don't need to add more water.
6. Stir in sour cream.

Bravo for a quick, easy recipe. I used vegetarian crumbles meat substitute instead of hamburger. Everything else the same. Not a fancy dinner, but reliable, tasty and comfy. Might try some light sour cream next time instead of fat free. Thank you for posting.

Great simple recipe. I did use 3 1/2 cups of water in total. I used light sour cream and added in 2/3 c. frozen corn, it was great!

My brother was over and it was unexpected so I doubled the recipe and served it and he asked for the recipe. VERY GOOD! Easy, simple and delicious-- fast too!
