"Delicious - please make these again". Well, I will! I cooked the potatoes on the stove, drained them, returned them to the stove top and threw in the milk and sour cream instead of yogurt to warm them up - I find they incorporate better when they are warmed. I also used just the adobo sauce as I was in a hurry and did not have time to mince. Omitted the salt, enough salt in the sauce. I had these with a spicy Greek sausage, but they would be great with a pork chop, or turkey or chicken or beef patty. Or fish. Or by themselves. Thanks for posting.

  1. Place potato pieces in a large microwave-safe bowl.
  2. Cover bowlwith plastic wrap, and cut a 1 inch slit in center of plastic wrap.
  3. Microwave 10 minutes on high setting.
  4. Let stand 2 minutes.
  5. Add remaing ingredients to bowl, stir, and mash with a potato smasher.
