- 2 medium ripe tomatoes, diced
- 1 medium red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 jalapenos, stemmed and minced
- 1 cup corn kernel, drained
- 2 cups canned black-eyed peas, rinsed
- 1 cup baby lima beans
- 2 garlic cloves, finely chopped
- 1⁄4 teaspoon cumin
- 1 lime, juice of
- 1 tablespoon olive oil
- salt
- pepper
directions
- Mix all ingredients together in a medium bowl and season with salt and pepper to taste. Let sit 30 minutes. Serve at room temperature.

I live in an RV and am traveling on the road with my family. Daddy is a travel welder and we go where the work is. The girls love to eat home cooked meals. I am a stay at home mom. I think that my favorite cookbook would be to call my mom and ask her for a recipe. She can cook, and create all kinds of recipes off the top of her head and all with leftovers.
