This is my mother's delicious recipe and it's easy enough to assemble on a busy weeknight.

- 1 1⁄2 lbs boneless pork, cut into 1/2-inch cubes
- 1 tablespoon vegetable oil or 1 tablespoon canola oil
- 1 (15 ounce) can black beans, rinsed & drained
- 1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
- 1 (14 1/2 ounce) can Mexican-style diced tomatoes, undrained
- 2 (4 ounce) canschopped green chilies
- 1 cup quick-cooking brown rice
- 1 cup chicken broth
- 3 tablespoons salsa
- 1 teaspoon ground cumin
- 1 cup frozen corn, thawed
- 1 cup shredded Mexican blend cheese
- In a large skillet over medium heat, cook pork in oil until no longer pink; drain.
- In same skillet with pork, add the beans, soup, tomatoes, chilies, rice, broth, salsa, cumin and corn; cook and stir until bubbly.
- Pour mixture into an ungreased 2-quart baking dish. Bake, uncovered, at 350 degrees for 30 minutes or until bubbly.
- Remove from oven and sprinkle with cheese. Let stand a few minutes before serving.

With some slight modifications this dish was awesome and everyone loved it. I marinated the cubed pork in fajita sauce overnight and cooked it in the slow cooker with the sauce on high for a couple of hours. In a large bowl I combined rinsed (important to rinse) black beans, corn, green chilies (I used fire roasted), tomatoes (drained- I also used fire roasted), brown rice (I cooked it first), and soup. I added the cumin and also a little chipotle chili flakes. I then transferred the pork to the mixture using a slotted spoon and thoroughly stirred before transferring half the mixture to a 9 by 9 deep casserole dish. I added a layer of shredded cheese, then topped with the other half of the mixture. After 30 minutes in the oven I topped with a generous layer of the Mexican cheese and sprinked with crushed chili lime tortilla chips and returned to the oven until the cheese was melted. I think cooking the rice first, draining the tomatoes, rinsing the beans and omitting the chicken broth was key to making this a wonderfully thick, and dense (but creamy) casserole.
I am writing this review without rating because I am going to give this recipe a second try to verify the issue was not something I did because it ended up smelling incredible, but the rice didn't cook and it was a watery mess.
