Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1. If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not.

Thanks for a great recipe. My wife was a little skeptical, because we've tried a few recipes for crock pots that have just made "mush"! This was a perfect blend of flavors, and the pork was so moist and tender, it just fell apart! We enjoyed the light tortillas with no fat sour cream, and some fat free cheddar. Made for an easy 2 point per burrito(weight watchers), that was quite filling! Smelled great while cooking, tasted better going down! Thanks again! :)
