  • In a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes.
  • Add hominy, beans, salsa and chicken broth. Bring to a boil, reduce heat and stir in chicken. Cover and cook 5 to 10 minutes more until heated through. Stir in cilantro. Serve with more cilantro and sour cream if desired.
