I used 2% milk instead of buttermilk, that is what I had on hand. This was a very easy and good recipe.
What a great dish. Crispy on the outside, juicy on the inside. I soaked the chicken in the buttermilk for an hour or so. I served with a broccoli slaw. After making this several times I decided that I like them baked till a touch past the colden brown stage.
This is a very easy way to prepare healthy, crunchy, moist chicken! I think the cornflakes could use some seasonings, they were a little plain for my taste. But this recipe can be adjusted easily to fit one's tastes. I baked mine for exactly 20 minutes and it was perfect. Thanks for the healthy recipe!
I couldn't believe how good this turned out. When I had it all prepped and ready to go into the oven, I thought it looked unappetizing and didn't even want to bother baking it - and then it came out and I gave some to the husband, he raved over it! Even asked if I'd marinated the chicken first, which I hadn't.. it was so tender and nice tasting that he thought it'd been marinated.
Delicious. Very easy and guilt free. I used thick-strained yogurt instead of buttermilk. I also tried other cereals, and I bet this would be great with chopped pecans as well.
