This is a smooth sweet pecan pie that is easy to bake.
- 2 tablespoons butter
- 1 cup sugar
- 4 eggs
- 3⁄4 cup light Karo syrup
- 1⁄2 cup Dark Karo syrup
- 1 dash nutmeg
- 1 tablespoon vanilla (pure mexican vanilla is best)
- 1 1⁄4 cups pecans (halves or chips)
- Cream butter and sugar together. Add eggs, beating one in at a time with electric mixer on medium speed. Add, vanilla, nutmeg and karo and beat well. Pour into unbaked 10" inch pie shell. Put pecans on top and place aluminum foil around the edge of the crust to avoid burning. Bake 15 minutes at 400 degrees. Reduce heat to 350 and bake 45 more minutes. Remove allow to cool about 15 minutes and serve warm.
