      This was delicious - the best recipe for this combo that I've ever had. Because I cooked it in on the stove in a Dutch oven, I did few things differently: I browned the bacon, adding the onions to the bacon toward the end. I stained the bacon fat, then added a large-diced 1-pound ham steak instead of the hocks, and used a quart of homemade chicken stock for the liquid, adding a little more when I added the potatoes. Because of these changes, the 2 teaspoons of salt made it too salty. Next time I will hold off on the salt till it's done cooking and add it to taste, if needed. I also added the lesser amount of cayenne

      Very good recipe.I used chicken broth instead of water and small amt. of red peper flakes instead of cayenne pepper. My son's loved it.
