Southern Fried Green Tomatoes With Shrimp and Tomato Relish
- It is best to make the relish first, to allow the flavours to marry.So combine the diced red tomato, onion, basil, 2 Tbsp olive oil, salt & pepper to taste.
- Dredge the green tomato slices in the seasoned flour. On med high, heat the oil in a heavy pan .Fry the tomato slices for approx 2 mins a side.Remove from pan and drain on paper towels.
- Season shrimp with salt & pepper. saute in a hot non stick pan for 2 minutes, Lower the heat to med and add the garlic and 1 Tbsp butter. Stir for 1 min and remove from heat.
- Place the tomato slices on plates, top with the mozzarella cheese, sauteed shrimp and the tomato relish. Drizzle some juice from the relish around the plate.
