DH loved this!! I used homemade italian dressing and probably didn't have a full cup but I didn't really feel like making more. I wasn't sure if I was supposed to drain the rotel or not so I didn't and it turned out great. The next day I added avocado to change it up a bit and he loved it like that as well. Made this especially for DH as a surprise ~ he loves food surprises :) I put this together last night and sent some off for lunch with him today ~ got a call "What is this stuff ~ it's great!" so...there you go. As this can be made a head just made for tomorrows pot luck. Was slick and quick to put together. Looks nice in a plastic bowl. Now for the best part had to sneak a taste and it was good after only an hour can only imagine how it will be tomorrow. Thanks for the post.
MMM...mmm...good! I marinated this for 4 hours--perfect! Also, used some fresh corn cut from the cob--totally forgot the green onions (DUH). Still deeelish!! Thanks for posting this yummer! Made for Everyday's a Holiday Tag.
Let me tell you that this is Sooo Goood. It's a great snack food and you don't feel horrible about eating it. I'm snacking on some right now lol. It has a perfect balance of flavors. The only thing i did differently was i made my own italian dressing with rice wine vinegar and olive oil. I also omitted the jalapeno but added cayenne instead. Awesome with frito corn chips
