Knew I loved the Southwestern soups - so not too much of a surprise to find we loved this burger. For dietary issues I went easy on the cheese - other then that made as posted. A real taste treat - great to find new versions of a summer favorite. Thank you Mulligan.

Not your tradititional type burger and looks sort of bland but this was very very tasty. I used 3/4 of a cup of mayonnaise instead of a full cup. The cheese mixture softened up but didn't run all over with that consistency. You could very easily make only a 1/3 of the mix and it would be enough for just four burgers. I froze what didn't get used. Also, I didn't add the dash of sweetener. Really doesnt' need it with the cream cheese. I think next time I'll use one slice of an artisan bread lightly toasted and have it open faced.

Wow, the pemento cheese sauce really made this! I made this for my husband, but ended up using some of the pimento cheese as a sandwich! Thanks Mulligan!
