This is the salsa that goes with the Spinach Frittata in Phase 1.
- 4 plum tomatoes, seeded and chopped
- 2 scallions, minced
- 1 garlic clove, minced
- 2 tablespoons fresh cilantro, minced
- 1 tablespoon fresh lime juice
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon fresh ground black pepper
- In a large bowl, stir together the ingredients.
- Serve fresh at room temperature.
