"I have recently started the South Beach diet and had to come up with a way for my wife and me to satisfy the craving of pizza so I came up with this little snack."

  • Preheat the oven to Broil.
  • Slice the tomato to 6 even slices .
  • Top each slice with a tbsp of pesto and a slice of cheese.
  • Broil until cheese is melted and eat away.

  3. AMAZING!!! I used a roma tomato (all I had) and it was just the right amount for a late night snack. Really curbed my craving for pizza & something cheesy! Will be making this often.
     
  4. This was so delicious. I did add a few bacon bits to one slice and since another one had a hole in it from the core I placed a slice of ham underneath. Both of these adds were awesome. The tomatoes did get a little mushy but were easily eaten with a fork!
     
  5. These are a MUST try! Both DH and I found them delicious! So easy to make, too! DH doesn't even like tomatoes, guess I found a way to get him to eat them.
