One more way to use your starter! Sometimes I skip the topping and just drizzle white frosting over the top.

Ingredients Nutrition

  1. Combine sourdough starter, oil and egg.
  2. Stir together dry ingredients and add to sourdough mixture.
  3. Put dough into greased 9 inch square pan.
  4. Crumble topping ingredients together (I use a pastry blender) and sprinkle topping on top of batter.
  5. Bake for 35 minutes at 350 degrees.

Lovely dense coffee cake, quick to fix and perfect with coffee or tea. We enjoyed how the topping sank into the cake in places. Used starter that I'd fed earlier in the day. Next time I'd bake only 30 minutes. Thanks for sharing the recipe!

Wonderful!!!! My family loved it and I loved being able to use our sourdough starter in a completely different way. Excellent and easy!! I did use melted butter in place of the oil (same as I do for sourdough pancakes) and I doubled the streusel topping. We live at nearly 7000 feet and no adjustment was needed. It baked perfectly in a glass pan - 350 degrees for 35 min. To set the center, I turned off the oven and let the coffee cake stay in for an additional 5 minutes. It came out perfectly. Thank you for a simply delicious alternative for use with starters. I can't wait to try your gingerbread!!

Love this recipe!! I read some of the other reviews and also decided to lower the amount of sugar in the cake and less on top. I also added chopped pecans on top which ended up being my favorite part! I baked it for 30 min and that was enough. Best eaten day of.
