Sour Cream Salad Dressing

"A cooked dressing equally at home on lettuce or dandelion salad, asparagus, cucumbers or on fish. From the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947."

• Yields: 1 1/2 cups

ingredients

• 2 tablespoons sugar
• 1 tablespoon flour
• 1⁄2 teaspoon dry mustard
• 1⁄8 teaspoon paprika
• 1⁄4 cup vinegar
• 1⁄4 cup water
• 1 egg yolk, beaten
• 1 tablespoon butter
• 1 cup sour cream

directions

1. Mix first four ingredients; add vinegar and water and cook in a double boiler until thickened, stirring constantly.
2. Pour over egg yolk and butter, return to heat and cook a few minutes longer.
3. Cool in refrigerator; fold in sour cream.
