Sour Cream Potato Salad

ingredients
- 6 potatoes, peeled and diced
- 4 eggs, hard boiled and chopped
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 cup sour cream
- 1⁄2 cup mayonnaise
- 1⁄8 cup red wine vinegar
- 1 teaspoon prepared yellow mustard
directions
- Cook potatoes in boiling water until tender, about 10 minutes.
- Mix all ingredients, adding potatoes and eggs last.
- Chill before serving.

Easy to make. Tried it warm and cold, both very good. I would have liked some crunch to the salad and next time I'll use a chopped onion instead of the onion powder and maybe a stalk of celery. Furthermore I would like some more "zing" and maybe some hot pepper flakes would do the trick. Don't get me wrong, this is a very good salad and we did enjoy it, just thinking of "upping" it a bit for next time. Thanks for posting. Made for PAC-Spring 2010.
